Here is a great spinach recipe that might even get your kids excited!
- One 6oz package baby spinach
- 1 tbsp extra virgin olive oil
- 1 tbsp salted butter
- 1 tbsp fine chopped garlic
- 1 tbsp red wine
- pinch of salt (to taste)
- pinch of black pepper (to taste)
- Over medium high heat, combine the butter and olive oil (Pro tip – the olive oil prevents the butter from burning at high temperatures)
- When the butter melts and starts to simmer, add the garlic.
- After about one minute, when the garlic just begins to cook, add the wine and mix thoroughly.
- Add the spinach and sauté until wilted. Top with salt and pepper to taste and serve hot.
